Partial representative structure of a fully substituted structure.
Partial structure of the crystal (fiber) form (see [248]) of a fully substituted structure, such as found in fenugreek gum. The molecule forms a 2-fold helix with a pitch of 10.38 Å. The most-favored structure in solution has been reported as similar but such molecules contain a number of kinks that reduce the molecular extension [291].
